A note on the words: shin-washoku means “new-style Japanese cuisine” — traditional Japanese cooking given a modern, often Western-influenced twist. Gozen is a formal set meal built around a main dish. Sukiyaki is thin-sliced beef and vegetables simmered at the table in a sweet soy sauce broth called warishita. Kuroge wagyu is beef from Japan’s black-haired wagyu cattle, prized for its marbling. Matsutake is a rare, fragrant wild mushroom that shows up on menus every autumn. Ikura is salmon roe, and chirashi sushi is a bowl of vinegared rice topped with an assortment of sashimi, as opposed to nigiri sushi, where each piece of fish is hand-pressed onto its own mound of rice.

Hello, this is Hangover Meshi. So — the list of places inside Tokyo Midtown in Roppongi that I have not been to has shrunk by one more! This time it was HAL YAMASHITA Tokyo. I had been wanting to go for a while. I had no reservation, but I asked at the door and they had a table free. Lucky! Inside, the windows are large and the daylight pours in, so the room is bright all over. Fresh and pleasant.

There are various courses, but this time I did not have the leisure to sit through one.
So I decided to pick from the single dishes. Looking down the list, the shin-washoku set meals built around a healthy salad caught my eye. Well, if I eat a salad and then eat rice it comes to the same thing, so if I am going that far I may as well go all the way — and I chose the salad-only shin-washoku 350g Special Salad Plate!
I came wanting the washoku at HAL YAMASHITA and ended up with a salad lol
So, with a cold green tea in hand, I settled in to wait for the salad ^^

Well, I should have worked this out before ordering, but 350 grams of vegetables is a fair amount ^^;
Come to think of it, is that not roughly a whole day’s worth of vegetables?
And there are three dressings.

An onion dressing, a thousand island, and… what was the third one?
And the amount of dressing is no joke either — the jars are filled to the brim. That is already a hint of what is coming!

That is big….
Well, of course it is. This is a 3,750 yen salad, after all. Naturally it comes at this size….
It is easily enough for two lol And the salad has steamed chicken, shrimp and scallops in it as well, so there is real volume beyond the greens! Still, it makes an impression, and that is no bad thing!
Right then — first I poured one of the dressings over part of it and dug in!!!!
Right, the vegetables are very fresh and full of moisture. Good.

And the onion dressing I started with is seriously good. The sweetness of the onion comes right through and sits beautifully against a soft acidity. You can crunch your way through raw vegetables at this rate. The steamed chicken is juicy and good, and the tomato is fine too! And I like that there are so many different vegetables in it. You do not get bored. Onion, bell pepper, lettuce, tomato, kabocha squash, baby corn, lotus root, burdock, broccoli and more. Yes, at 3,750 yen this makes sense.
Even so, the same dressing all the way through would get dull, so I switched to another one partway.
At this rate I might actually finish it!
And this is the sukiyaki my companion ordered!
It is the cook-it-yourself kind, and a rather grand set of equipment arrives, burner and all ^^

First you melt the butter here, and as it cooks you add the warishita broth straight away.
I got the timing wrong lol If you are slow with the warishita the butter scorches and starts to smoke, so do be careful.

There were plenty of vegetables and the meat looked very good, so the sukiyaki may well be the thing to order.

So — HAL YAMASHITA! A seriously good restaurant. The sort of place that puts fresh vegetables and good raw ingredients right out front. This time I went and chose an enormous salad, but the chirashi sushi is what they are known for. Next time I would like to try the seafood chirashi sushi. I am sure it is delicious. So yes, I would very much like to come back.
