Yamachan, Nakasu: Nagahama Ramen at 1am in Fukuoka

A note on the words: a yatai is a street food cart, and in Fukuoka they are an institution; several famous shops began as one. Nagahama ramen is the Fukuoka style named after the district by the old fish market — very thin straight noodles in a pork bone (tonkotsu) broth, served fast so the market workers could eat and go. Kata, futsu and yawa are the firmness options for the noodles: firm, regular and soft. Nira-tama is garlic chives scrambled with egg. Kikurage is wood ear mushroom, and chashu is the braised pork that tops the bowl. Tekka-don, mentioned in passing, is a bowl of rice topped with raw tuna. Nakasu is Fukuoka’s nightlife district. I want to eat something good today too. This is Hangover Meshi. After a night of running around, I was wondering how to finish when someone recommended Yamachan. It started out as a yatai and then became a bricks-and-mortar shop, and I was told that places with that history are the good ones, so off I went. I think it was just before one in the morning when we joined the line, and the line was enormous. Right — there is certainly no last train at this hour, but that is the sort of place Nakasu is.

Once we were in, they told us last orders were coming up. Cutting it fine.
So we ordered everything we wanted in one go.

Wonderfully fluffy egg with crisp garlic chives through it. That is more than enough to drink alongside. Delicious. Highly recommended.

My first serious go at Nagahama ramen.
They ask you properly how firm you want the noodles. Kata is thirty seconds, regular a minute and a half, yawa three minutes.
Kata is the way. When in Fukuoka, kata.

Out it comes, quickly. I had expected the noodles to be more aggressively raw than this, but the firmness turned out to be comfortable enough. And the aroma of this ramen broth is a little different from the others so far. Tonkotsu rises up at your nose with none of the barnyard smell at all. The broth is creamy and clean in the Nagahama manner — genuinely drinkable tonkotsu. One sip and you get mellow depth, salt with an edge to it, and a faintly sweet finish. Not too heavy, and yet unmistakably tonkotsu. A fine balance that would hold up as a late-night finish or as breakfast ramen. Good stuff.

The kikurage that gives the bowl its name is startlingly crisp. It drinks up the broth without losing its texture, and it crunches pleasantly with every bite. The noodles are very thin and straight, snapping cleanly in the way Hakata noodles do. The chashu is sliced thin but strong in flavor, and its saltiness gives the mellow broth an accent. Add a little of the pickled ginger and sesame from the counter and the outline of the taste sharpens further, turning it into a different bowl altogether. That is part of the fun.

Perfect in the small hours in Nakasu, whether you are sobering up or closing the night.

Just as I was told: the places that went from yatai to shop really are good. Thank you to whoever recommended it.

I came here meaning to have a closing bowl of ramen and somehow ended up eating properly, snacks and all. I dread to think how many kilos I put on today. Still, the prices are genuinely low and the food is very good. You have to applaud a place that goes for nothing clever and simply keeps things delicious. Yamachan’s ramen is the safe berth of the tonkotsu world, and the place a Fukuoka night comes home to.
