Debuchan, Takadanobaba: Hakata Snacks, Then the Ramen

A note on the words: Hakata is the old merchant half of Fukuoka, and Hakata ramen means thin straight noodles in tonkotsu, a broth boiled long from pork bones until it turns white and carries a distinct farmyard funk that regulars prize. Shime is the closing dish of a drinking night. Kanpachi is amberjack, motsu is offal and tripe, gyoza are pan-fried dumplings, and tetsunabe means they arrive in the iron pan they were cooked in. Sagari and harami are both the hanger and skirt cuts near the diaphragm. Chicken nanban is fried chicken dipped in sweet vinegar and covered in tartar sauce, a dish from Miyazaki. Karashi takana is mustard greens pickled with chili, the standard free topping in a Hakata ramen shop, and shochu is Japanese distilled spirit. Prices are as of this writing (August 2026).

Right, this is Hangover Meshi. This time, to Debuchan in Takadanobaba, which is both a ramen shop and an izakaya! A unique name^^. It is a ramen shop, but the snack menu is very extensive, and after eating a range of things you can finish with a bowl of ramen. Better still, being a ramen shop, that ramen is superb — so it looks like a thoroughly good experience! The rating is high, too!

Goma kanpachi, a Hakata specialty. The slightly sweet sauce of sesame and soy goes wonderfully with a drink^^

And vinegared tripe! Another Hakata specialty. The acidity, the scallion and the onion are pulled together in an instant by the karashi mustard!
Something about it makes you want shochu! I switched to barley shochu with soda.

They are mini gyoza, but chewy and full of juices. They have real presence!

There are two kinds of chicken nanban here. This is the orthodox one! Not the sort that is steeped in sauce.
The rich tartar sauce goes very well with a drink. I was starting to get full, so — on to the ramen!

A sip of the broth and it is not as funky as people say^^ A very rich, delicious pork bone broth! The real thing! Add a little garlic and the savor of the broth goes up a level! And adding the karashi takana tightens it with a bit of heat, which is good. This is delicious. They tell you the only noodle firmness available is standard, but standard is the best anyway^^

The char siu is tender too — irresistible!

Well! Absolutely stuffed. Thoroughly satisfied. They said you can use the place as an izakaya, but if you do not order ramen there is an extra 550 yen seat charge, so you may as well have the ramen lol Effectively 750 yen (that is not quite how it works lol) — it feels like a bargain! You can drink at leisure, the snacks are good and the ramen at the end is outstanding. A fine shop I should like to use regularly! Recommended!
