Ganso Hakata Mentaiju, Hakata Station: Two Bars of Mentaiko, One of Them Seared

A note on the words: mentaiju is a Hakata specialty of seasoned rice packed in a lacquered box and topped with whole bars of mentaiko (spicy cured pollack roe). Aburi mentaiko is lightly seared to create a crisp, smoky exterior while keeping the center rare. Shiraita kombu is a paper-thin sheet of pressed kelp wrapped around the roe for extra umami, and shredded nori is dried seaweed scattered over the rice. The Limited Express Yufu is the scenic train running between Hakata, Yufuin, and Oita.

I was taking the train from Hakata Station to Oita! Wondering what to eat onboard, I wandered around the souvenir section and spotted a delicious-looking bento shop: Ganso Hakata Mentaiju.

I wondered what it was, but it seems to be quite famous. Their main shop has long lines and requires a numbered ticket system, so being able to buy it at Hakata Station without queuing is the big selling point. Huh, I definitely wanted to try it.

Looking at the menu, the Mentaiju Jo (special) comes with two whole bars of mentaiko. 3,348 yen, ha!

Pricey! Ha.

Even the regular mentaiju was 2,000 yen! But when they told me, “By the way, if you choose the Jo, we can sear one of them into aburi mentaiko for you,” I caved and went with the Mentaiju Jo. I have no willpower, ha.

Oh, that looks delicious!

The one in front is raw, and the one in back is seared mentaiko. The seared mentaiko is wrapped in a delicate sheet of shiraita kombu (pressed kelp).

Let’s see: I started with a bite of the raw mentaiko. Sinking my chopsticks in, the roe separates gently, and with each chew the saltiness and savory umami layer together. Yes, that is top-notch mentaiko! Because the natural quality of the roe comes through directly, the flavor profile is wonderfully sharp and distinct. On its own the saltiness is quite strong, but take it together with the rice, and wow — isn’t this just the best?

With the aburi mentaiko, a smoky aroma hits you first. The medium-rare searing is dialed in just right. Since it is wrapped in kombu, the rich umami seems to soften the spicy kick.

The cooked roe grains have a much firmer, popping texture that is deeply satisfying!

The shredded nori spread underneath makes surprisingly good work of tying everything together. Its ocean aroma rises up, acting as a bridge between the rice and the mentaiko. It is delicious as is, but next I drizzled on the included sauce that was sitting on top of the box in the first photo!

They recommend drizzling it a little at a time rather than pouring it all at once. The sweet-and-savory note may soften what was purely salty and make it smoother to eat. I had worried two whole bars might be overly salty, but it never felt heavy, and I finished it with ease right to the end.

I see: 3,348 yen for a bento is certainly on the expensive side! But quality-wise, I felt it genuinely lived up to that price tag. It truly felt like treating myself to an extravagant meal. If you have come all the way to Hakata, you want to experience the local specialties as much as possible! I was grateful to pick up a bento from such an iconic shop without waiting in line. If you are taking a train journey out of Hakata Station, why not grab one for the ride?
