A note on the words: miso ramen is the Sapporo style, a heavy fermented-soybean broth with a lid of fat over it, usually served with bean sprouts and a knob of grated ginger. Shoyu is soy sauce and shio is salt, the other two ramen bases. Chashu is the braised pork laid on top, and chashu men is the bowl loaded with it. Menma is fermented bamboo shoot. Nishiyama noodles are a named brand of ramen noodle. Aka-Boshi, the red star, is what drinkers call Sapporo Lager. Edogawabashi is a quiet neighborhood north of Kagurazaka. Prices are as of this writing (August 2026).

Santora on Tabelog (English) — opening hours, payment details and the Japanese address are kept up to date there, not here.
Hello, this is Hangover Meshi. I remembered this place after a long gap and off I went! Santora, in Edogawabashi, where the miso ramen is good. I dashed over after work, then looked properly and saw the shop closes at eight, so I was slightly worried about making it — but all was well^-^ When I arrived there were three or four groups waiting, though I thought it was ramen, so the wait would not be long. Ten or fifteen minutes, I think, and I was safely inside!

Miso ramen 1,200 yen
Shoyu ramen 1,200 yen
Shio ramen 1,200 yen
Chashu men 1,750 yen

It takes real courage to order anything other than the miso lol lol
So it was miso again, though a small portion of noodles (half, apparently) takes 200 yen off!
I asked for that. You buy the ticket, tell the staff you want the small noodles, and they hand back 200 yen. In exchange, extra bean sprouts (150 yen)! And a beer, of course, and to my seat!
Beer first!

Aka-Boshi! And they gave me menma as a snack, which was a pleasure! The glass was properly chilled too! A drink first while I wait for the ramen.
This stretch of time is the best.

Whoaaaaa! It looks far too good!!!!
Start with the broth. Mmm, this deep miso broth is far too delicious.
The generous amount of fat is another good thing. The chashu tastes better warmed, so first I sink it to the bottom of the bowl^^
The bean sprouts have a good crisp texture. I dissolve the ginger into the broth and drink.
This really is a ramen that works beautifully as a drinking snack.

Eating Nishiyama noodles does make it feel like Sapporo miso.
The springy noodles go wonderfully with the rich miso broth!

I halved the noodles, and it turns out to be exactly right!
With extra bean sprouts and a beer as well, the quantity is spot on! The finest drinking-snack ramen there is!
Ah, that was good!
Being able to eat ramen of this quality on a weekday evening without much of a line is a fine thing! Edogawabashi is a little awkward to get to, but I want to come more often! Somehow, eating this has flipped my miso ramen switch, so perhaps I shall go round a few other shops for their miso ramen lol Highly recommended!

I ate here and paid for it myself. Nothing on this site is a comped meal.
