Hokkaido Ramen Himuro, Ueno: Sapporo miso ramen at three in the morning

A note on the words: miso is fermented soybean paste and shoyu is soy sauce, shio simply salt — the three standard bases for a bowl of ramen. Ajitama is a soft-boiled egg marinated in seasoned soy, chashu the braised or roasted pork laid on top, menma fermented bamboo shoot and wakame a soft seaweed. Orochon is a Hokkaido name for a fiery version of the bowl. Sapporo, Hakodate and Asahikawa are cities in Hokkaido, each with its own ramen tradition. Prices are as of this writing (August 2026).

I want something good to eat today too. This is Hangover Meshi. Late at night. The drinking is finished and all that is left is to weave my way home — and then a ramen shop appears in front of me. Well, there is nothing for it but to go in. That is what I thought. Once you have had a drink you simply cannot beat temptation.

It had to be the Sapporo miso ramen. Decided without hesitation. I added an ajitama as well.

Ramen on a cold night this late is almost too good

Inside the shop it is warm, and that alone is happiness.

The good smell of noodles boiling drifts over. I had clearly drunk enough, so I passed on a beer.

Oh, that looks good!

The steam rising off it helps the case considerably. On top: wakame and spring onion, chashu, an ajitama, menma. One mouthful in — delicious. A bowl that gives you the full orthodoxy of Sapporo miso ramen, and its charm is how rich it is. The broth has depth from layers of umami, yet the salt and the sweetness are in balance, so it never turns heavy, and after drinking it has a kind of black magic that keeps you spooning it up. The noodles are thick and chewy, a touch soft perhaps. Together with the scalding broth they fill a stomach that has been out drinking. Eating this many noodles will make me fat — but I am drunk and cannot stop myself. I finished every bit of it.

So: the cold and the after-drinks hour are half the flavor. And in the middle of that, the happiness of a thoroughly orthodox Sapporo miso ramen. Everywhere else is shut, and this place is open. The savior of Ueno. Wondering how late they go, I looked it up, and apparently it is until 3:30. Go past that and you will have to find somewhere else.
