A note on the words: wagyu is Japanese beef, bred for its fine marbling; teriyaki sauce is a sweet-salty glaze of soy sauce, mirin and sugar. Real Baran, Zucchi-na and OTONA Real are the shop’s own coined names for its burgers, not descriptions of what is in them. Prices are as of this writing (August 2026).

More on ALDEBARAN on Tabelog (English)
I want to eat something good today too. This is Hangover Meshi. This time, a hamburger shop in Azabu-Juban: ALDEBARAN. Or rather — it used to be right beside Roppongi Hills, did it not, and I went there once back then. It has moved since, and is now in Azabu-Juban, I hear. Come to think of it, the old site looks to have been cleared and a new building put up on it, so I had been wondering where they had gone. That day I looked like having a little time over lunch, so: let us go and try it. Off I went.
The old place had a tucked-away feel as I remember it, and this one is well hidden too.
I went in and asked, “It’s just me — do you have a seat?”, and they asked whether I had a reservation. Of course I had charged in without booking anything at all, and it turns out the shop now works on timed reservations. They kindly said that if I did not mind waiting they would grill mine in a gap between bookings, so I took them up on it and stayed to eat.
We take reservations at fifteen-minute intervals.
When you book, you also decide which burger you are ordering.
We grill exactly on time, the same as a train or an airline timetable.
Please note that if you are more than five minutes late without contacting us, we will not be able to grill your burger.
So it turns out this is a place you really cannot get into without booking properly…

What I had last time, it seems, was something called the Zucchi-na Cheese, which means I had never eaten the Real Baran, the most popular one of the lot. So that is what I ordered this time. (And with no reservation, ordering something elaborate would only have been a nuisance for them.)
Well, my last visit was six years ago, so it is only to be expected — but prices have gone up ^^
For a drink I asked for a Coke Zero.
They asked whether it was all right to bring it out at about the same time as the burger, and I said please do.
They will bring it out when a gap between bookings gives them room, so I was not going to push.
After a while a cabbage salad — coleslaw? — appeared.
And soon after, the Coke Zero ^^.
Then the fries arrived.
Fries with a strong crisp to them. The sort you can eat in a snap, and good.
And here it is, the Real Baran burger!
One bite, and it is good. This is a burger I would call about as close to ultimate as they come.
First, the bun, worked slowly on the griddle until it is crisp outside and soft within. A rich smell of butter to it as well.
Then a 100% wagyu patty, with cheddar, a soft-cooked egg and roasted onion.
And the sweetness of the teriyaki sauce pulls the whole thing firmly together.
The vegetables are deliberately kept light, but the savor of the meat, the melting cheese and the richness of the egg run together into one, and every bite says: good.
I see — this is a burger with both punch and polish, the kind you would happily book a table for.
Well now, you really do have to book properly for this one. Or rather: if booking is all it takes to eat this, that is a fine deal. I happened to get in without a reservation this time, but only because I was on my own and it was a quiet moment, so I would recommend booking properly. The person next to me was eating something like an appetizer, part of a course by the look of it. Perhaps I will try that next time.
