Hangover Meshi here. Back to Sushi Muku / Sushi Shirogane — though this time not for the evening sake pairing but for the lunch course. It was as reasonable and as satisfying as ever, so I thought I would write it up. I had never been here during the day before. The entrance is still a little hard to walk into if it is your first time, but open the door regardless and there is a large counter inside. This time we sat side by side at the counter.


Lunch omakase course 5,500 yen
5,500 yen for a sushi lunch is quite reasonable for the Roppongi area. And there is a lot of it — sixteen items on the omakase.
Right, the course begins.

Hisui-nasu ohitashi — jade aubergine steeped in a light dashi broth — and cream cheese cured in sake lees. The aubergine is cold and clean-tasting. Very good.

And this is the katsuo tataki, seared bonito. The cold sauce and the crunch of the onion are both very pleasant.

And now the nigiri begins — hand-formed sushi, fish over a pressed finger of rice. First up, mizudako, giant octopus.
Good chew, and very tasty — though a few more scores of the knife through it would have made it easier to eat.

Kanpachi. A large cut, but thanks to the knifework it stays soft. Very good.


Young corn and Manganji pepper, a mild green pepper from Kyoto.

Firm, springy flesh full of savoury depth. Very good.

Steeped and then lightly grilled. Soft, and the way it falls apart in the mouth is hard to beat.

At this size it is quite a large aji. A different texture from the shimaaji — I may prefer this one.

Melting chutoro. Excellent. Tuna at a sushi counter really is a level above.


This zuke is very good too. Not a heavy marinade like a zuke-don, but a light one. My favourite of the whole line-up.

Hata is a rarity. Fatty but clean, and easy to eat.

A bite-sized small bowl. There is takuan pickle in it, so it eats rather like toro-taku.

Practically a dessert, this. Sweet sauce and soft, fluffy anago. Very good.

Sixteen items for 5,500 yen. Remarkable value. The room feels properly Roppongi, and at that price the level of satisfaction is very high indeed. The evening sake pairing is enormously satisfying too, and this lunch is excellent. A very good shop. If you want a real sushi counter in Roppongi without ceremony, this one is worth checking.
