Raamen Irotoridori, Kami-Itabashi: Taiwan Mazesoba

A note on the words: tori paitan is a broth boiled from chicken until it goes white and creamy; shio means salt-seasoned and shoyu soy-seasoned. Taiwan mazesoba is a Nagoya invention despite the name, a brothless bowl of thick noodles under spiced minced pork, scallion, garlic, nori and a raw egg yolk, which you mix together before eating. Tsukemen is noodles served separately with a dipping broth. Char siu is the braised pork, nikumiso is minced meat cooked down with miso, and nori is dried seaweed. Sudachi is a small green citrus from Tokushima. Prices are as of this writing (August 2026).

Hello, this is Hangover Meshi. This time, a ramen shop near Kami-Itabashi Station called Raamen Irotoridori. Their recommendation is apparently the chicken paitan ramen, and this was my first visit.

It was lunchtime, but there were only a few customers.
A counter and two tatami-seating tables. There were plenty of picture books for children about, which presumably means families are welcome. A pleasant sort of shop^^

Dishes worth noting

The menu splits three ways — chicken paitan, mazesoba and tsukemen — and each then divides again into soy, curry, salt and so on. Mm, the chicken paitan surely, I thought. But the Taiwan mazesoba is intriguing, is it not. Not choosing the headline dish on a first visit feels a little cheeky, but never mind^^

Oh! That looks good.
And there is a great deal of it lol Can I eat this?
The toppings are laid out beautifully, though! Scallion, char siu, meat miso, nori and raw onion. In the middle sits an egg of a lovely color. It seems a shame to mix it, but mix it I do.

Mm, promising!
One mouthful and the sauce is deeply rich — good!
The noodles have real bite and strength to them. They are not in the least overwhelmed by how rich the sauce is. I did think the heat was a touch lacking, but there was a green bottle on the table — Sudachisuko, I think? Something like a green Tabasco — so I doused it in that. A tart chili sauce suits it perfectly.

Partway through, a splash of vinegar makes a superb change of pace!

I was given a taste, and as you would expect from a shop built on chicken paitan, the rich, deep broth is magnificent!

I ate the Taiwan mazesoba first, but the chicken paitan is the recommendation after all! It was excellent. It is fairly hearty ramen with a lot of it, and I thought it a very satisfying bowl. There are seasonal chilled bowls too, so it is a shop worth coming back to regularly!
