A note on the words: chahan is Japanese fried rice, though here it refers to Taiwanese-style fried rice cooked with firm, individually distinct grains. Zhacai is pickled mustard plant stem, kuushinsai is water spinach stir-fried with garlic and chili, and suanlatang is hot and sour soup.

To all fried rice fans, thank you for waiting! It is time for Hangover Meshi!
I had been hearing a lot about “Minsei Chahan” recently and wanted to visit, so while I was in Yokohama I stopped by! I went to Minsei Chahan!
Minsei Chahan is a fried rice specialty shop originally located on Minsheng East Road in Taipei, Taiwan. Incredibly, they have specialized in fried rice since 1984, and apparently even won first place in an online poll in Taiwan.

I didn’t know at all, but it seems they arrived in Yokohama Chinatown in 2019. The location is not on the main street, but tucked just off Ichiba-dori; far from the flashy, gilded grand gates, it is a tiny yellow-and-orange shop. If you didn’t know about it beforehand, you probably wouldn’t easily step inside, ha.

Now, let’s head inside and buy a ticket.

It was a bit of a walk here from the station, so I was a little tired!

For now, let’s have a drink!
Sipping my beer, from beyond the counter I could hear the brisk, rhythmic clatter of a wok being tossed. Just the aroma wafting over tells you it is going to be good. Let’s study up on the recommended way to eat it while waiting for it to arrive.

Take your photos within 20 seconds, and savor the fried rice just as it is. Shift the flavors with spicy zhacai and chili sauce, then tag it on social media! ha.

Here it comes — looks delicious!
From the mound heaped on the white plate, soy-stained rice, yellow egg, bright green water spinach, and beef peek through. What rises up is the aroma of rice toasted against the hot wok and caramelized soy sauce.
Taking a bite, the flavor is rich and robust, just as it looks. Yeah, delicious! First comes a bold punch of soy sauce, followed by the savory umami of beef fat gently spreading out. Because the meat is in actual chunks, the sudden burst of concentrated flavor whenever you hit a piece of beef is quite enjoyable.

The rice is cooked on the firmer side, each individual grain staying distinct right to the end. Chewing the well-toasted grains, the savory aroma on the surface and the bounce at the core stand out distinctly. It feels distinctly different from the fried rice at Japanese neighborhood Chinese diners. The texture feels closer to fried rice from places like Panda Express. The crisp crunch of the water spinach makes for a great accent!

The accompanying soup is a clear broth with no ingredients, serving its role to cleanse the palate between bites of the rich fried rice.

Spicy zhacai and chili sauce were also mentioned on the guide for how to eat it! In particular, adding the chili sauce in the second half cranks up the heat and transforms it into a completely different kind of deliciousness! I ladled it on generously and made it pretty spicy, but that only made it pair even better with beer — really tasty. It might not be for those who don’t handle spice well, but I think I prefer it spicy.

When you finish eating, this face appears at the bottom of the plate.
This time I visited Minsei Chahan, Taiwan’s premier fried rice specialty shop in Yokohama Chinatown, and I feel I understood a bit why so many people get hooked. It is an entirely different beast from the fried rice typically eaten in Japan. Firm rice thoroughly coated in oil, wonderfully loose and separated grains. The seasoning is rich and makes a great partner for beer. At 1,300 yen it does feel a bit pricey, but if you haven’t tried it yet, why not give it a shot?

Here’s hoping for another encounter with great food today!

Fried rice
Purchase tickets at the ticket machine. Number 1, beef fried rice, is the signature dish.
Generous chunks of beef, egg, and water spinach. Richly seasoned, with firmly cooked, well-toasted rice.
Fried rice comes with soup. Rather than on the tables, spicy zhacai and house-made chili sauce are set out at a self-serve corner in the dining room, where you can take as much as you like onto small dishes. There is also a loyalty card where collecting 15 stamps earns you one free bowl of fried rice.
A la carte / Soup
Taiwanese summer vegetable stir-fried with garlic and chili. Pricier than the fried rice — the most expensive dish in the shop.

I ate here and paid for it myself. Nothing on this site is a comped meal.
