We started at 5:00 p.m., right after the opening of the restaurant, because it’s not very crowded these days. There was no one there at this time of day.

The seasonal menu has many spring-like dishes such as wild vegetables and bamboo shoots, all of which look very delicious.
First is the entrée.
In the meantime, I’ll be drinking beer for a while.
And boiled spring vegetables with wild vegetables.
Yum! The beautiful green and clear broth looks delicious.
And five points of sashimi. It is a shochu from this area.
And the highest horse sashimi from Kumamoto.
Looking at this marbling, it looks like it’s not a horse sashimi.
And when I tried it, it felt completely different from the horse sashimi I usually eat!
The meat melts in your mouth the moment you put it in. There is no nastiness and it is amazing.
What was it with the horse sashimi until now?
And the tempura of spring wild vegetables.
The tempura of wild vegetables is refreshing with a moderate bitterness and very delicious!
And the best part of the day was the charcoal grilling of bamboo shoots.
This is so delicious. Even though it’s only charcoal-grilled, it’s sweet and very rich in flavor. This is the most impressive. I had no idea that just grilling fresh bamboo shoots would be so delicious!
I could still eat it, so I added more charcoal grilled bacon!
And seared tender beef tongue!
The bacon is savory and perfect as a snack for a drink.
The tender beef tongue is really soft and melted.
And finally, one more dish. And so it was fried.
It wasn’t actually on the menu, but when I asked, they gladly served it to me.

I thought it was a good idea to go early and leave before the crowds started. I don’t feel like I can say so after this, but I wanted to enjoy the meal while being considerate enough.
